Kale Power Salad

Almost a whole year since my last recipe post! Now that I am working from home until further notice, I have more time to experiment with recipes and share my findings with you – so stay tuned!

I don’t know about you all, but I have been seriously struggling with balancing nutrition and convenience. The frozen meals are just so easy, and who knows when the next time I’ll be able to go to the grocery store is! However, I’m aware that this is only sustainable for so long. And I know myself well enough to know my current diet of bread and cheese is seriously contributing to my lack of energy.

I was finally able to get over to Trader Joe’s on Friday to get my choice of kale to make my favorite salad ever. It is the perfect combo of tangy, sweet, and savory – and it truly hits the spot whenever I want a health boost!

Here is what you’ll need

  • 1 & 1/2 cups of kale
    • I use Trader Joe’s organic kale, as it isn’t too bitter and has a nice crunch
  • 1 organic small apple
    • I prefer Gala apples in this, both for the sweetness and the crispness
    • Tip: I highly recommend getting an apple divider – it has change my life for the better
  • 2 tbsp of goat cheese
    • Trader Joe’s chevre with honey gives the perfect sweet to creamy ratio
    • For those of you who don’t like goat cheese, feel free to sub in feta or blue cheese
  • Trader Joe’s Green Goddess dressing

Combine all ingredients together in a bowl, and voila! A beautiful and healthy salad for each and every taste bud. I love a bite with apple and goat cheese together, because the flavors compliment each other so nicely.
